Rich Butternut Squash - Sweet Potato Soup Recipe

When winter sets in, and temperatures drop, your joints can feel it. Studies show that lower temperatures can increase joint discomfort – but this warming winter recipe can counteract that effect. Packed with joint-friendly healing ingredients, this delicious and satisfying meal will warm your bones and ease aches and pains.

Rich Butternut Squash-Sweet Potato Soup Recipe

Bright orange veggies bring a vibrant splash of color and joint-soothing powers to the table. Warming ginger boosts the inflammation-fighting effect and adds zesty spice to balance the sweetness.


  • 1 tablespoon canola oil
  • 1 small onion, chopped
  • 1½ tablespoons fresh ginger, minced
  • 2 pounds butternut squash, peeled and cubed
  • 1 pound sweet potatoes, peeled and cubed
  • 8 cups of water, vegetable stock, or chicken stock
  • Salt to taste

  1. Heat the canola oil over medium heat in a heavy-bottomed soup pot or Dutch oven.
  2. Add the chopped onion, stirring regularly, and cook for around five minutes, until the onion is tender and translucent.
  3. Stir in the ginger until it begins to give off fragrance, one to two minutes.
  4. Add in the butternut squash, sweet potato, and water or stock, making sure the vegetables are completely covered by the liquid. (If not, add in liquid ½ cup at a time until they’re fully covered.
  5. Bring the soup to a simmer, and add salt to taste, ½ teaspoon at a time.
  6. Cover the pot, and continue to simmer for 45 to 60 minutes, until the ingredients are tender.
  7. With an immersion blender, puree your soup thoroughly. You also can do this in a regular blender, pureeing small batches at a time.
  8. Add additional salt to taste, if needed.
  9. Rewarm this hearty soup, and enjoy.

TIP: If you use powdered ginger instead of fresh ginger, reduce the amount to one heaping teaspoon.
